Style: Brut
Selected Cuvées, blended for a young, fresh style predominately from Pinot Noir and Chardonnay. Cool stainless steel fermentations ensure clean varietal fruit character and expressive primary aromas.
Secondary fermentation in bottle is followed by a fifteen months lees ageing. Each bottle is disgorged to order to maintain freshness. Diam, Mytic Technical corks are used to ensure taint free consistency.
TASTING NOTES
Appearance: Pale gold with pink highlights and a fine sustained bead.
Nose: Clean and fresh with hints of citrus, apple, and dried herbs.
Palate: Lively, lemony acidity, crisp apple, white pepper and thyme characters. Finish is fresh and sustained.
Food Pairings: Enjoy as an aperitif or with light seafood, chicken, and vegetable dishes.
