TYPE OF SOIL: White clay alternated with layers of sand and limey marl

VINIFICATION: The grapes are harvested in 20 kg boxes and directly poured into the press, where a soft and delicate pressing takes place. The obtained must is put into thermo-conditioned tanks where it is statically decanted and then started to ferment in stainless steel tanks at low temperature (18-20 °C). At the end of fermentation, the wine is kept in contact with lees until spring. At this point the cuvée is made by blending the wines of the many selected crus. In springtime, the wine undergoes a second fermentation, in bottle, followed by a maturation process on lees in the cool, dark and protected environment of cellars, according to the strictest rules of the Metodo Classico sparkling wine.

TASTING NOTES: The cuvée is made with a wise assemblage in order to obtain a fresh and fruity wine. The period of aging, never less than 30 months, gives the great finesse, the right aromatic complexity, the enveloping perlage and the intense and balanced taste that structure the bubbles of Limited Edition. The color is straw yellow with greenish reflections and the bouquet is reminiscent of honey, white pulp peach, grapefruit and basil. In the mouth the wine is sapid with an enveloping bubble but with a sweet and long finish. 


PAIRINGS: Excellent as an aperitif, with its personality it is, above all, an excellent way of accompanying all courses of a meal.
