Production area: Butera, Central-Southern Sicily
Vinification and Aging: After gentle pressing of the grapes harvested at perfect ripeness, fermentation begins in stainless steel at a controlled temperature (16–18°C) and concludes in French oak barrels. The passage in wood lasts for a period of 4 months. It is then aged for a minimum of two months in the bottle.
Tasting Notes:
Color: Straw yellow, clear and bright, with golden highlights.
Nose: Ample bouquet, with hints of fruits such as green apple, lemon, and pear, accompanied by more complex notes of tropical fruit, such as pineapple and mango. Hints of pastry, vanilla, and hazelnut can also be detected from the vinification and aging in wood.
Flavor: Balanced, with good acidity that makes it fresh and pleasant, and a rich and smooth texture.
Food pairings: Excellent as an aperitif, with fish dishes, and white meats.
Serving temperature: 10°-12° C
Alcohol content: 13% vol.
