The Fox Trot, Cabernet Sauvignon 2015, Yering Farm
Series: Farmyard Series The Fox Trot 100% estate grown Single Vineyard
Winemaker & owner: Alan Johns
VITICULTURE:
Clone: NV6 single clone
Trellising: Scott Henry / Hanging Cane
Soil: Clay loam
Seasonal notes: Good Winter rainfall in 2012 creating excellent soil moisture. Early heat in Spring and a warm dry Summer, led to an early harvest, but cool conditions in Autumn allowed optimal ripeness in fruit.
WINEMAKING: The fruit was handpicked from 30 year old mature vines. Left on skins for 3 months. Wine matured for 18 months in French oak hogsheads. Approximately one third new oak. 100% open pot fermenters. Small batch production, with an individual approach, highlighting regionality, crafted in traditional classic style.
TASTING NOTES: Full bodied, rich wine with powerful aromas of red berries, earthy complexities and hints of spice and blackcurrant. Soft approachable integrated vanilla oak tannins. Rich dark red brick colour. A defining, spicy, dry finish.
Alcohol: 13%
