Seasonal notes: Cool start to summer with plenty of rainfall, a coll to mild summer and an early autumn.
WINEMAKING: Hand-picked and transferred into ½ tonne open pot fermentors, hand plunged twice daily. The fruit was inoculated with selected yeast, to bring out aromatics and complexity. After approximately 14 days of fermentation with 10% whole bunch fermentation, fruit was pressed lightly to barrel, where it underwent malolactic fermentation. Matured for 10 months in tight grain 30% new French oak with the balance in seasoned French oak. Light filtration and no finings necessary.
