Vinification: The name is derived from the many oaks, in Local slang ‘roan’, that define the various lots ofvineyards from which grapes we obtain the ‘Capitel de Roan’ Amarone della Valpolicella Classico. The vineyard is situated on the best hills of Valpolicella classico, well grown, of father low production, but of high qualit’a. The clayey land and the good position at the sun favour the accumulation of sugars and of the flavour. In October the grapes are chosen bunch for bunch and put in plateux until February - March. The wine we obtain is put into steel basino so that fermentation can end; usually fermentation goes on until July/August, which gives the high strength. Then is put to age, partly in oak barrels and partly in French barriques.
Description: Strong red color, which, due to the ageing becomes red-orange. Intense aromas. Dry, velvety and pleasant taste.

Period of refinement: At least three years
Combinations: Roast, red meat and game, old cheese like parmigiano.
